This is probably one of the cheapest and easiest, most nourishing recipes that you can whip up in a few minutes. Kamote provides vitamins and fibre that will keep one full for hours. Its sweet, comforting taste and texture makes it easy to eat any time of the day! The chick pea topping is crunchy and savory and pairs well with the kamote’s sweetness. We always keep kamote and chickpeas as our pantry staples because they are so easy to make into different things. Add avocado to this dish for some good fat and a creamy texture!
- 1 whole kamote
- 1 can chickpeas or 1/2 cup dried chick peas
- 1/2 red onion, chopped
- 1 tomato, diced
- 3 sprigs wansoy or coriander , chopped
