One of my family’s favourite dishes is adobo. It’s a staple and comfort food that everyone looks forward to. It was a challenge getting everyone to embrace a new plant based adobo. We tried many vegetables including the usual kangkong, but the only one that seemed to be more filling was using puso ng raging. A whole puso is enough for the family to enjoy!
- 1/4 cup soy or tamari sauce
- 1/2 cup vinegar
- 1/2 cup water
- 1 small onion, finely sliced
- 8 cloves garlic
- 1 puso ng saging, chopped
- pinch pepper
- 2 tomatoes, chopped, to garnish
To avoid using oil, put a little water, vinegar and soy sauce in the pan.
Add the garlic and onion and simmer until the onion is translucent.
Add the chopped puso ng saging.
Add the rest of the water, soy sauce and vinegar.
Simmer the puso until its cooked.
Add the pinch of pepper .
At the last minute, add the chopped tomatoes.
Serve with hot rice.
