- 1 ampalaya, seeds removed
- 2 tbsp rocksalt
- 2 slices pine apple, then diced
- 2 tomatoes, chopped
- 4 kalamansi, juice squeezed
Rub the salt all over the ampalaya halves.
Rub the salt well into the ampalaya until most of it is absorbed. Slice the ampalaya into small pieces.
Place slice ampalaya in a bowl and add pineapple and tomatoes.
Add the kalamansi and toss. Store in a jar for up to a week.
