Tomatoes are in abundance now as we are getting into the summer months in the Philippines! I personally love eating green tomatoes raw with a little salt, and then when they are ripe, chopped into salads. I also love bloody Marys! This recipe was inspired by a farm visit I did last week where there were tomatoes being harvested. When I got home, someone had sent me sili leaves (chilli leaves) that are normally put into soups for a little kick. I decided to create a juice that is similar to a Bloody Mary, without the inflammatory side effects. So quick, so easy to enjoy!
- 4 ripe tomatoes cut into segments
- 2 stalks sili leaves
- 5 stalks parsley, any kind
Juice the tomatoes first.
Add in the parsley and taste the juice every now and then to see if it is to your liking.
Add the sili leaves slowly to control the spiciness. You can use more or less depending on your taste.
Take a 4 oz glass and wet the rim only .
Pour out salt on a plate. Press the wet rim of the glass into the salt, coating it completely. Make sure you get all sides!
Pour in the juice and garnish with a parsley leaf!
