Camote and sayo are not two vegetables that would normally be paired together. Its interesting that the two are both from the same squash family, and are both such versatile ingredients. We take on a Mexican flavour with this easy dish that is sure to please both kids and adults. You can add any other garnishes such as cilantro, red onions, even corn if you like!
- 1 to 2 whole camote, boiled and mashed
- 2 sayote cut into strips
- 1 tsp smoked paprika
- 1 whole tomato, chopped
- 1/2 red onion, diced
- handful wansoy to garnish
- 4 soft tortilias
In a bowl, mash camote. Season with salt and pepper. Set aside
Pan sear or grill the sayote strips until tender. Then dice.
Put in a bowl and season with salt, pepper and smoked paprika.
Heat the tortilia by placing it on a pan or grill until warm. Set aside.
Spread the camote over the tortilia.
Add the seasoned sayote. Garnish with onion, tomato and wansoy.
Roll it up and enjoy!
