A friend brought back a pack of delicious coconut granola from a trip to San Francisco. As I ate it, I couldn’t help wondering why we haven’t done this in the Philippines. Every time coconut milk is freshly squeezed, the meat is discarded. The coconut is one of the most versatile fruit out there and it seemed like a shame to waste it. I studied the coconut granola from San Francisco and came up with something as close as I could. Try this out and let me know what you think! This recipe does not fit in the usual Mesa Ni Misis budget as the cost of some ingredients are quite high. However, should you find yourself with a surplus of coconut meat, its an awesome recipe to try out!
- 4 cups shredded coconut meat- use the meat that has been pressed so not to waste it!
- 1/3 cup maple syrup
- 1/4 cup dates, chopped
- 1/4 cup dried mango, chopped
Put all the ingredients in a bowl and mix well.
Put the coconut mixture in a food processor or blender and pulse until they are all combined.
Line a baking sheet with parchment paper and spread out the mixture.
Bake at 250C for 15 minutes. Half way in, pull out the baking sheet and mix the coconut so all parts brown at the same time.
Remove from baking sheet and cool. Keep in an airtight jar for up to a week. It is delicious with any milk of your choice!
