People who are worried about transitioning to a plant based diet often wonder about protein. The veto, paleo and other high protein diets have created an obsession with protein. However, plants provide the best sources of clean, usable protein!
This quick and easy dish makes use of 7 grains soy or edamame pasta. The noodles themselves already contain 21g protein. The sauce is then made with any bean you have, kalabasa and iron rich greens. Enjoy this quick and easy nutrient rich meal!
- 2 servings pasta of your choice ( use 7 grains edamame or soy pasta for extra protein)
- 1/2 cup soaked beans of your choice ( the smaller the better)
- 1 cup water
- 1- 1 1/2 cup tomato sauce
- 1/4 cup kalabasa, diced
- 1 cup leafy green- mustasa, pechay
- dash Italian seasoning
- salt and pepper to taste
Boil the pasta noodles. Drain. Set aside.
In a pan, place the water and the beans to boil.
When beans are tender and water has evaporated a little, add the tomato sauce.
Add the kalabasa.
When the vegetables and beans are tender, add the greens.
Add salt and pepper to taste.
Layer the sauce on top of the noodles and serve.
