Every cuisine has its version of a comfort food rice bowl. The Chinese have their different fried rice flavours, Koreans have the rice toppings, Pinoys have our garlic rice ( with our without toppings). We took inspiration from Greek food to create this dish using Alugbati. Alugbati is in the spinach family and is packed with the same nutrients! Throw this in with sun-dried tomatoes and olives ( most people have this in the fridge anyway!) and voila, a healthy tasty dish.
- 4 cups cooked rice ( red, brown or white will do)
- 5 pc sundried tomatoes, sliced thinly
- 10 olives sliced in half
- 2 cups alugbati, sliced in strips
In the pot where the rice was cooked, combine the olives, sundried tomatoes and alugbati with the rice.
Turn on the stove to low heat.
Begin to mix the rice and all the ingredients until you see the alugbati wilt a little bit. This will take 3 to 5 minutes.
Add salt and pepper to taste, and its ready to serve!
