Aroz ala Cubana is a comfort for that brings together the sweet and savoury. Eating the perfect bite with just a little bit of everything is a like tasting a big warm hug. This meat free version brings together all the familiar flavours and is so delicious you will forget that its purely plant based. Opt to forgo the egg for a total plant based version!
- 1 cup boiled kayos ( pigeon pea)
- 1 cup tomato sauve
- 1 clove garlic, chopped
- 1/2 onion chopped
- 1 tsp paprika
- 1 tsp chilli powder
- 1/2 tsp salt to taste
- 1 saging saba, cut into strips
- 1 egg per person
In a sauce pan, put the tomato sauce, garlic and onions.
Stew for 5 minutes.
Add the cooked kayos.
Add the salt, chilli and paprika and stew for 10 minutes until flavours come together.
Slice the banana into strips, lengthwise.
Heat a teaspoon of oil, and fry till the sides are crunchy. To opt for an oil free version, the Saba can be baked.
In a frying pan, make a sunny side up egg.
For an oil free version of the egg, crack the egg in a small bowl. Place the bowl in a steamer and cook till the egg is done.
Put the egg on top of a cup of rice. Serve side by side with the kayos and banana.
