Kang kong pesto is a staple one should have on hand at all times. It can be used as a pasta sauce, sandwich filling, on a salad or on vegetables! The local leafy green is available all year round and oh so good for you! This pesto is great for kids as its tasty and is packed with good calories from the nuts. This also works nut free- just adjust and add nutritional yeast to make up for the nutty and cheesy taste!
- 2 bunches kang kong, washed and chopped- include the stems!
- 1 to 2 cups olive oil- adjust consistency to your liking by adding more
- 5 cloves garlic
- 1/4 cup cashews, soaked
- 2 tbsp nutritional yeast- adjust to give a cheesy taste to your liking
- salt to taste
Place all ingredients in a blender.
You can adjust the ammount of olive oil to your liking, as well as the salt and nutritional yeast.
