Nothing soothes the soul as well as a mother’s soup. Since my family and I made the switch to a plant based diet, my mom has also changed the cooking in her house to follow suit. Every time we eat at her house, she is always excited to have us try her new recipes. On a trip to Portugal, she learned how to make Caldo Verde, a green soup that is flavoured with chorizo. She has since changed the recipe to make it not only meat free, but local too. Only a mom can love like that, and her soup tastes just like a big warm comforting and healthy hug.
- 2 cloves garlic
- 1 white onion, chopped
- 2 medium orange camote
- 1 bunch petchay, chopped
- 3 cups water
Place a little oil in a pan and sauté the garlic and onions.
Peel the camote, chop and add to the garlic and onions.
Add the water and bring to a boil.
Blend together the camote, garlic and onions with the stock ( water it was boiled in).
Gradually add more stock until you reach a medium- thick consistency.
Boil the thick soup again.
Add the native petchay and wilt it. Serve hot.
