As Filipinos, rice is something we can’t live without. Walk into any home and there is a pot of rice that is ready to be eaten, freshly cooked or even a day old. Rice in and of itself isn’t full of too many vitamins and nutrients. However, it can be a binder for all sorts of wonderful things. Take this Mexican rice, for example, the simple addition of corn and beans make it a whole meal! Prepare this for a quick meal on the go, or for baon during a busy week!
- 1 tsp garlic
- 1 tsp onions
- 3 cups cooked white or red rice
- 1/2 cup tomato sauce
- 1/2 cup fresh tomatoes
- 1 cup corn
- 1 cup beans, any kind
- 1 tbsp tomato paste
- salt and pepper to taste
In a pan, heat a little oil. Stir fry the garlic and onions till they are transparent.
Add in the rice.
Slowly add the tomato sauce and tomato paste.
Mix in the corn and the beans. Add salt and pepper to taste.
