This mushroom bowl is perfect for days when you just need to get a meal on the table quickly. You can throw any bean into this bowl however monggo is the most cost effective. Feel free to throw in whatever greens you have lying around!
- 1/4 onion diced
- 1 cup oyster mushrooms, sliced into strips
- 1 cup cooked monggo
- 2 cups cooked rice
- 1 tbsp sesame oil
- 1 cup any leafy green
In a pan, heat the sesame oil.
- Add the onions and mushrooms and sautee.
- When the mushrooms have softened, add the cooked monggo.
Add the rice.
Season with soy or tamari sauce.
Add salt and pepper to taste.
