Bistek tagalog is undoubtedly a favourite comfort food. The slightly sour mixed with the saltiness of the toyo, with onions on hot rice is enough to make your mouth water. We’ve re created the same flavour and meaty feel using mushrooms. Shitake mushrooms were used here, but less expensive oyster mushrooms will also bring a great texture to the dish. Onions are a key part of the dish so feel free to add more!
- 300 grams mushrooms
- 8 kamalansi juiced
- 1/8 cup soy sauce
- 4 cloves garlic
- 1 whole yellow onion, sliced into rings
- 1/2 tsp black pepper
- 2 tbsp water
Marinate the mushrooms in the kalamansi , pepperand soy sauce for an hour.
Stir fry the onions and garlic in a little oil until translucent.
Remove the onions from the pan.
In the same pan, add the mushrooms. These will cook quickly.
Add the marinade and simmer. Add in the onions and garlic.
Taste the sauce and temper it with water if necessary. Remember that mushrooms absorb flavour faster than meat.
Serve with a side of rice.
