Mustasa- aka mustard leaves have often been resigned in Filipino cooking at least- to be in soups with fish and miso, a side salad or stir fried with lots of oil. Its high level of antioxidants, blood detoxifying properties, high levels of vitamin L and phyto nutrients make put this high on the list of greens to eat! Add it to a simple omelette- or if you are feeling fancy like we were this morning- in a little souffle ( that’s just a fluffy omelette thats’s baked!) Get your greens, and vitamins IN at the first meal of the day!
- 1/2 bundle mustasa
- 4 eggs beaten and fluffy
- 1 tbsp milk or almond milk
- pinch salt
Line a small baking dish with olive oil.
Beat the eggs in a bowl until fluffy.
Add the mustasa, salt and milk and beat further for about 30 more seconds.
Put in the baking dish and bake in the oven at 300 degrees for 25 minutes or until you see the egg rise.
Serve right away- the egg deflates but the taste remains!
If you are in a hurry, this works as an omelette as well!
