For those who eat plant based, beans are one of the heartiest most filling things to eat. A delicious bowl of beans with a side of rice is satisfying to the soul and body. Beans are not normally used in oriental cuisine, but this dish has proven to bring together a favourite ingredient of Tex-Mex with the flavours of the east!
- 1 cup cooked pinto beans
- 1 tbsp sesame oil
- 2 tsp soy sauce
- 1 thumb size piece ginger, sliced
- 2 cloves garlic
- 1 onion chopped
- 1 bunch greens of choice
Heat a pan to medium heat and add the sesame oil.
Add the garlic , ginger and onions. Cook till the onions become transparent.
Add the beans.
Add the soy sauce to the beans.
Once the beans are coated with the sesame-soy mixture, add the greens and wilt them.
Serve over a side of garlic rice, or your favourite Chinese takeaway rice!
