Radish always seems to be put on the sidelines- or side dish as you would have it. Pickled, in a salad, shaved or as an added garnish, radish is packed with potassium, fibre and good for heart health. Roasting the radish with garlic, olive oil salt and pepper seems to take the sharp edge away while preserving all the benefits. This roasted veggie works perfectly with the saba mash. Enjoy it as a light meal or an appetizer!
- 2 whole white radishes, peeled
- 1 tbsp olive oil
- pinch salt
- 4 cloves garlic chopped
- dash paparika
- 4 ssaging saba, mashed
- 4 sprigs coriander
Place the radishes in the baking dish.
Pour over the olive oil, salt, pepper and garlic.
Roast for 30 minutes at 380 degrees.
Mash the saba while the radish is roasting. Mix in the chopped coriander.
Add salt and pepper to taste.
When radish is done, place on serving dish and top with a sprinkle of paprika. Serve with saba mash.
