M Dining is one of the best fine dining restaurants in Manila that prides itself on using the best ingredients. Known to search the world for specialty ingredients in season, it seemed like an unlikely place to promote local, Filipino vegetables. However, Chef Tom Bascon showed that inexpensive everyday vegetables that we take for granted- kang kong and singkamas, can be elevated to a new level. Seeing what Tom did to the humble singkamas and how he used his experience working at a Mexican restaurant in New York to create a dish for Mesa Ni Misis absolutely blew the minds of diners who tried his Singkamas- Kangkong salad.
The dish was made up of grated singkamas, frozen pine apples, fried kang kong leaves, fried singkamas, a dressing of avocado, raw kangkong and calamansi topped with dried siling labuyo for a powerful tangy kick at the end. All the ingredients taken separately are ones that we over look in every day eating, but in the hands of Tom Bascon, together produced a magical result.
