Sometimes, the best meals come about by accident. The best thing about being plant based is that all your ingredients are relatively fresh and easy to combine. This particular dish came about when I was seeing what was left in the fridge and pantry. I had bought a can of Chinese black beans to experiment making vegan ‘bagoong’. At the same time, i had a huge craving for Japanese food. This bowl of noodles is balanced in protein, fibre and carbs!
- 1 bunch buckwheat noodles
- 1 1/2 tbsp chinese black beans, save the brine
- 1 cup cooked kamote tops
- 1 sprig green onions
1. Boil the buckwheat noodles till they are al dente
2.Mix in kamote tops.
3. Top with the black beans and brine and mix well.
