Re-create the smoky, meaty flavour of a sausage paella without the meat!
- 1 teaspoon coconut oil
- 1 cup paella rice
- 2 cups vegetable broth
- 1 pack paella spice
- 1 sachet saffron (or 2 pinches saffron)
- 1 teaspoon paprika
- 2 teaspoons tomato paste
- 2 tomatoes
- 2 cloves garlic
- 1/4 small red onion
- 1/2 cup chickpeas
- 1 bell pepper
- 1/4 cup green beans haricot vert or baguio beans, for locally sourced
- 5-6 florets broccoli for topping, and if this is a one-pot meal for kids
- Add chopped spinach or malunggay to sneak in veggies for the kids!
- Vegan sausages (We used ones from sift.ph)
Heat the oil in the pan.
Toss in the onions, tomatoes, garlic, tomato paste, and paella spice pack to release the flavours. Add the rice slowly to toast it.
Slowly add the broth to the rice mixture.
Add the chickpeas, beans, bell pepper, and any sneaky vegetables you want to hide in the rice!
While the broth is still floating over the top of the rice mixture, add the saffron. This way it seeps into the broth.
Give it a good mix one last time. Then cover with foil.
Check the consistency of the rice once in a while to make sure there is enough broth. Add as needed.
When the rice looks almost done, add the broccoli florets to the top to steam them.
In another pan, heat up the vegan sausages and add a little crunch to them by pan frying them in a little oil.
Once cooked, place them on the top of the paella, and let steam for a few more minutes.
Serve straight out of the pan, because it's pretty enough to do so!
