Taco Tuesdays will never be the same with these vegan tacos! Made with locally sourced and easy to find ingredients, the biggest challenge will be trying to stop eating! Add any other vegetables you have in the fridge to fill it up!
- 5 corn tortillas
- 1 cup kalabasa
- 1 cup cooked sitaw seeds- black is better
- 1/2 onion diced
- 1 tsp paprika
- 1 tsp chilli powder
- 2 cloves garlic, chopped
- 1 avocado, scooped out and mashed
- 2 tomatoes, diced
- 1/2 onion, diced
- 3 tomatoes, chopped
- 5 stems, wansoy, chopped
- 1/2 onion, chopped
- 1 tbsp calamansi juice
- salt to taste
Cut the avocado in halves. Scoop out the flesh.
In a bowl, mash the flesh.
Add the chopped onion and incorporate well.
In a bowl, mash the beans with the back of a fork.
When everything is mashed, set a side.
In a pan, heat a little oil. Add the chopped onions and paprika.
Add the mashed beans and sauté.. Make sure you incorporate the onions and paprika and chilli well.
Roast chopped kalabasa in a baking sheet by adding olive oil and a little salt. If there is no oven, stir fry in a pan.
Create the salsa by combining the chopped onions, wansoy, tomatoes and calamansi juice
Heat the corn tortilla In a pan with no oil until it softens.
Lay it out on a flat surface.
Spread the refried beans on the bottom.
Add the roasted kalabasa.
Add the guacamole
Top with salsa.
Repeat for all the tacos!
