Easy Protein Pasta
  • 2 servings pasta of your choice ( use 7 grains edamame or soy pasta for extra protein)
  • 1/2 cup soaked beans of your choice ( the smaller the better)
  • 1 cup water
  • 1- 1 1/2 cup tomato sauce
  • 1/4 cup kalabasa, diced
  • 1 cup leafy green- mustasa, pechay
  • dash Italian seasoning
  • salt and pepper to taste
  1. Boil the pasta noodles. Drain. Set aside.

  2. In a pan, place the water and the beans to boil.

  3. When beans are tender and water has evaporated a little, add the tomato sauce. 

  4. Add the kalabasa. 

  5. When the vegetables and beans are tender, add the greens. 

  6. Add salt and pepper to taste. 

  7. Layer the  sauce on top of the noodles and serve.
