Hainasese Vegetable Bowl

  • 1 tsp oil
  • 3-4 tsp minced ginger
  • 3-4 tsp minced garlic
  • 3-4 tbsp scallions white and light green
  • 2 heaping cups mushroom
  • 4 cups vegetable broth
  • 1 1/2 cup white rice
  • sliced tofu
  • sliced scallion dark green parts
  • bokchoy
  • wild mushrooms
  • Hainanese chilli sauce
  • scallions -ginger sauté
  • soy sauce
  1. Blanche all garnishes in salt water for 2 minutes. 

For rice
  1. Sautee garlic,ginger, scallions with salt and pepper.

  2. Add rice and sauté a little more.

  3. Add broth and cook till soft. 

For tofu
  1. Dredge in flour.

  2. Next, dredge in egg wash. If you want a vegan substitute, mix 1 tsp ground flaxseed with 3 tsps water. This equals 1 egg. You may dunk the tofu in this mixture. 

  3. Coat with panko bread crumbs.

  4. Fry till golden brown.

  1. Place the cooked rice in a bowl.

  2. Top with all garnishes and fried tofu.

  3. Serve with a bowl of broth on the side, along with sauces.

Hainasese sauces and ginger-scallion sauté can be bought ready made at the store.
